One serving consists of: 1 salmon (150 g) 40 g wild rice 1 cup mixed green vegetables (spinach, broccoli and baby marrow) INGREDIENTS 1 small onion4 x 150 g salmon pieces1 cup uncooked wild rice1 cup uncooked spinach4 cups uncooked broccoli4 tbsp Dijon mustard4 medium baby marrows3 tbsp MCT oil½ lemonPinch of salt INSTRUCTIONS Mix Dijon mustard with 1 tablespoon MCT oil and lemon juice. Cook 1 cup of wild rice separately. Fry salmon in a pan with 2 tablespoons MCT oil. Brush salmon with the Dijon mustard mix while frying the salmon. Remove the salmon. Fry the green vegetables and onion in residual MCT oil. Remove the vegetables. Refry the cooked wild rice in residual MCT oil. Garnish with micro herbs and serve.
