Keto Spinach and Feta Egg CupsOctober 2022 October 2022 Share Link Close share Copy link INGREDIENTS 8 eggs1/2 cup of feta cheese, crumbled1/2 cup of finely chopped fresh or frozen spinach (if frozen, thaw and drain first)1/2 teaspoon salt1/4 teaspoon black pepper1/4 teaspoon garlic powder1/4 teaspoon onion powderSprinkle of red pepper flakes INSTRUCTIONS Preheat the oven to 180°C and line a muffin pan with liners. Whisk the eggs until smooth, and add feta, spinach and spices and continue to whisk until fully combined. Add approximately a 1/4 cup of the egg mixture into each muffin pan (it will make +/- 11–12 egg cups) Bake for 20 minutes.
